You need to do this so the potatoes can cook evenly with the air fryer. And if they cook evenly, it will cook faster. You’ll want some of them to be cooked while the others aren’t done. All the more reason why you should try to slice them evenly, in such a way they share the same thickness.
Immerse the wedges in water
Immediately after cut potato wedges, let them sit in water for a while. At least long enough so that wedges can release some starch and absorb water in return. This is how the wedges can get crisper after you air fry them. If you don’t wish to wait, you can skip this tip and proceed immediately to the next.
Coat the wedges with oil
All the wedges should be coated evenly with oil on every side. You don’t have to hold back when applying oil. Because the air fryer uses at least less than 80 percent of oil to cook meals. Thus the excess will drain out the potato wedges.
Marinate the potato wedges with seasoning

To cook wedges evenly and quickly, you have to arrange them properly in an air fryer. If you don’t do this, potato wedges may not come out completely crispy and fried. It best to arrange them evenly in a single layer, in such a way all will be exposed to the heat.

Step by step recipe of how to air fryer potato wedges
Select the number of potatoes you wish to fry. Peel them all and then wash thoroughly. After that, slice them into wedges. It has to be evenly sliced to ensure cook evenly and fast.

You soak the wedges in warm water for at least 10 minutes and marinate them with oil. When you soak the wedges, excess starch will be released and more moisture will soak in. As said earlier, this will make the potato wedges very crispy once you’ve air fried them.
Once you’re done soaking the wedges in warm water and marinating them with oil. Preheat the air fryer at 400 degrees Fahrenheit.
While the wedges are being soaked, you can take advantage of your free time to make the seasoning. The ingredients for has already been listed earlier on this post. You’ll need parsley, rosemary, smoked paprika, garlic salt, and oregano. If you don’t have all or any of the ingredients, you can always mix it.
Season the wedges and spread evenly by one layer in the air fryer’s basket. If you didn’t cut the skin of the potato, then place the wedge on the basket with the skin touch the bottom.
After spreading the wedges evenly in the air fryer’s basket, you close up the fryer and set the timer to fry at 400 degrees Fahrenheit for 15 minutes. You can check from time to time before the timer hits 15 minutes, to see if the potato is crisp enough. If they are not crispy enough, you set the timer for another 5 minutes.
Note: you don’t have to flip, turn the wedges over or shake the basket, given they are spaced out evenly on one layer.

After you cut potato wedges and then you soak them in warm water for 10 minutes or more, use your free time to set up a bowl for seasoning. Get a medium-size bowl with eggs and milk in it. Whisk them together and then coat the potato wedges with it. Set the bowl aside and prepare another bowl of the same size.
With the new bowl, add some seasoning salt, black pepper, flour, garlic powder, and paprika. Stir the contents of the bowl until they combine. The next step to take is to coat the already marinated potato with the flour mixture. Make sure all sides of each wedge is covered. Then, shake off the excess flour.
Place the wedges in the air fryer basket–don’t overcrowd it. If there are still some patches on the wedges left exposed, spray a little oil on them.
Once you’re done with that close the air fryer and set the temperature to 360 degrees Fahrenheit for 22 minutes or less. When the time hits half the time you’re using for air frying, stop the fryer, open it, and flip the wedges. So that you spray the parts of the wedges that still have flour on them. Close the fryer and let it cook for the remaining time. Then you repeat the same for the next batch.
